Recently, while brunching someplace, i ate Couscous for the first time & i loved it so much, i took a second helping! (second helping of a salad?? Must be something) It was done in a very simple style with just a dash of olive oil, barely any seasoning & vegetables…and yet it was appetising.
Couscous is actually a type of pasta. It’s made of semolina & durum wheat. It originated in North Africa. It’s one of the easiest & fastest side dish but is grossly under-popular in the rest of the world. If you have a pack of instant couscous at home, it can be readied in just 5 minutes 😃 The little grains are almost like sponges that absorb any dressing or lemon juice with ease & result in a refreshing dish. A few weeks ago I bought a pack of couscous, read up a few recipes & decided to make a simple salad from it at home. Here it is. Hope you’ll enjoy it as much as I did 😁
Couscous Bell Pepper Salad

minutesA refreshing salad made with Couscous, peppers & cucumber.
Ingredients
Couscous: 1 cup
Hot water: 1 cup
Cucumber: 1/2; chopped
Mixed peppers: 1 cup; de-seeded & chopped
Onion: 1/2; finely chopped
Tomato: 1; chopped
Olive oil to drizzle
A dash of lemon
A generous pinch of pepper
Salt to taste
Directions
- Combine the couscous, hot water & salt in a bowl. Cover & let sit for 2–3 minutes. Remove the lid, add a drizzle of olive oil, fluff with a fork. Perfect couscous every time!
- Toss the chopped vegetables in the prepared couscous. Add the pepper & check for seasoning. Squeeze half a lemon. Ta-da!
Notes
- Feel free to add any vegetables of your choice. Broccoli, carrots, olives are great additions to the salad.
- I also added some feta cheese to it when nobody was looking 😉 Delicious!
